    老家糯米酒制作工艺及流程
    糯米里含有丰富的淀粉,淀粉在淀粉酶的作用下,先转化为麦芽糖,再转化为葡萄糖。受到酒曲里酒化酶的作用变为酒精。其味甘甜柔顺,所以称为甜酒。

    原料准备
    酒曲子一个(大小如鹌鹑蛋),糯米1000克(用清水洗净,净泡1-2小时)
    流程及工艺

    。将洗净泡好的糯米隔水蒸熟

    。将蒸熟的糯米用凉水降温并打散成颗粒

    。控出降温的糯米水分80%——判别:无明显水迹

    。将捻碎的酒曲与降温的糯米充分搅拌均匀,留少许酒曲后用

    。将搅拌均匀的糯米放进可以封闭的容器里,压实

    。将最后留下的酒曲均匀洒在压实的糯米表面

    。封好容器,并用保温材料包好

    24小时之后即可闻到香喷喷的糯米酒香了

    糯米酒的吃法
       
    将发酵好糯米酒加适量水及白糖煮至沸腾后

    。放凉即可食用

    。打进一个搅拌好的鸡蛋热吃

    性味:甘辛、温、无毒。
    归经:入肝、肺、肾。
    功效:月经不通,乳汁不畅,麻疹未透,肾虚腰疼,阳萎早泄。

      说明:糯米酒是由糯米醣化后,酵母发酵制成的,酒精含量较低,含丰富的糖类和维生素等营养物质,滋补性较强,对人体较为有益,宜用于产后或病后身体虚弱,配合滋补食物以增强滋补疗效。
      验方参考:
      1、糯米酒一小碗,加入菊花叶捣烂绞汁半酒杯,煮开后趁热服食,治妇女哺乳期乳汁不通。
      2、公鸡一只去肠杂切碎,加油和少量盐放锅中炒熟,盛大碗内加入糯米酒一斤,隔水蒸熟,治肾虚腰疼,阳萎早泄。
      3、糯米酒二两,煮开后服食,治小儿麻疹透发不够,服后需卧床盖被发汗。
